Bridlewood Cabernet Sauvignon

While the high daytime temperatures allow for complete ripening, it’s the low night temperatures that create the thickening in the skins producing the aroma and flavor precursors that winemakers the world over search for. Our Sunnybrook Ranch in southeast Paso Robles is situated on rolling hills with southern exposures offering early morning warming, protection from drying afternoon winds and cold nights slowing sugar accumulation, increasing tannins and flavor compounds resulting in extended hang time and delaying harvest until late November!

Winemaker Notes:

Over half of the grapes were harvested by machine at night to keep the fruit cool, while allowing an “in the field” cold soak during transport to the winery to maintain the delicate flavor characteristics and provide additional extraction of color and tannin. Three different fermentation techniques were used to enhance different characteristics from each of the vineyards used. The upright pumpover tanks extract aromatics and allow for softer tannins producing a perfumey fruit forward wine. The Rotary fermenter maintains skin contact resulting in a wine with deeper color and richer tannins while the cone-sweep tanks are used to remove pips allowing for more time on the skins without developing bitter components.
